From Franco and Elvira's trattoria to La Corte today: food, vineyards and a way of welcoming guests passed from one generation to the next.
It all began with a trattoria
In 1953, Franco and Elvira opened a trattoria in Montevecchia. It was a simple place where evenings were spent playing scopone, while wine from the family vineyards accompanied local cheeses and cured meats. The family grew, and so did the restaurant, around the remains of an old convent.

Coffee-roasted rabbit began as an unconventional idea. For many guests, it marked the transition from trattoria to restaurant: the flavour of a home-style roast, with an unexpected detail. It remains part of Ristorante Passone's menu today.

In the 1980s, the next generation began creating dinners around local produce, with wine taking centre stage. The menu became more exploratory, bringing the first newspaper mentions and guidebook listings. Growth did not take Passone away from its roots: the kitchen, dining room and local landscape remained at its heart.

Today, Passone remains a family business, shaped by people, places and ideas. Those working in the dining room, kitchen and across the family's different activities carry forward a way of welcoming guests built on care, continuity and curiosity. With the third generation, this hospitality has also reached La Corte, from dinner to morning.

Before it became home to ten apartments, the courtyard was connected with the grape harvest and the family vineyards. This is where Passonino bianco and rosso were made. The restoration preserved the fabric of the place, from its walls and vaulted ceilings to the courtyard, and gave it a new purpose: welcoming guests.

The family vineyards continue today at Agriturismo Passonino, a short distance from La Corte. It is another chapter in the same story: the land, the work and time shared outdoors.
